Vegetable Pancakes

1 small zucchini

1 onion

4 eggs

2 clove garlic

3 tablespoon fresh parsley

1/4 cauliflower

1/2 bunch green onions, green pepper, yellow squash

Vegetable oil

Chef blend seasoning

Thin cut all vegetables into strips (thinner the better), chop and add parsley, eggs, flour and season to taste mix well. In hot skillet add a little oil and spoon mixture to make 3 - 4 inch cake brown and turn over. Cook till pancake is firm.
