Spring Market Potato Salad

5 new potatoes washed

1 inch diced skin

1 sweet onion, cut 1 inch pieces

1 clove garlic, chopped

1 medium size zucchini, quarter and sliced

20 pea pods, sliced in strips

1 small bunch swiss chard, cut in 1/2 inch strips

2 table balsamic vinegar

8 table honey

Boil potatoes till just cooked (keep firm) in large saute pan coat with small amount of olive oil and heat. When pan is hot add onions cook 45 seconds, add garlic, zucchini, pea pods, cook 1 minute add Swiss Chard cook 30 more seconds. In large bowl mix honey and vinegar add the warm potatoes and vegetables mix well salt and pepper to taste serve warm.
