Summer Beets & Potato Side Dish 

4 peeled beets

3 med size new potato

1/2 onion

Small bunch beet tops

Small bunch Swiss chard

Chefs seasoning blend

olive oil

 

Slice beets, potatoes and onions in thin strips, slice beet tops and chard in 3/4 inch thick strips. Heat up large skillet add just enough olive oil to coat bottom, when hot add onions. Cook 1 minute, add potato's cook 5 minutes, add beets cook 3 minutes, till tender add beet tops and Swiss chard cook 30 seconds remove from heat. Season to taste with chefs blend. Serve with your favorite entree.
