Sweet Potato and Spinach Salad

  • 4 cups packed torn spinach
  • 1 medium Sweet potato peeled and cut to ½” cubes
  • 1 small red bell pepper cut into matchsticks


DRESSING:

  • 1/3 cup thinly sliced onion
  • 1 Tablespoon Canola oil
  • 1 Tablespoon Orange Juice
    1 ½ teaspoon rice vinegar ( not sweetened)
  • ¾ teaspoon salt


Place potato cubes in pan and bring to a boil. Cook 7 to 8 minutes. Drain and rinse briefly under cool water. Combine dressing ingredients in a bowl with a whisk or fork. Toss dressing with potato, spinach and pepper.
