Roasted Cauliflower Vegetable Dip

  • 1 head of cauliflower
  • 2 whole garlic
  • 3 bunches of spinach
  • 1 hot Hungarian pepper
  • season mix
  • heat oven to 400 degrees
  • Wrap whole cauliflower in foil with 1 cup water roast for 30-45 minutes
  • Wrap garlic in foil and roast for 30-45 minutes
  • Roast pepper in oven for 20 minutes


When cauliflower and garlic are tender, squeeze garlic from clove and add to the cooked cauliflower. Course chop spinach and add to hot cauliflower- mash together. Split and clean seeds from pepper, chop fine and add to mixture. Season and serve with crackers, pita breads and cut vegetables.
