Jan Nowicki - Nowicki Gardens Green Tomato Spice Cake - 4 cups chopped green tomatoes
- 1 Tablespoon salt
- 2 cups sugar
- 2 eggs
- 3 cups flour
- 1 teaspoon cinnamon
- 1 teaspoon nutmet
- 1 teaspoon baking soda
- ½ cup raisins
- ½ cup walnuts
Preheat oven to 3500 grease and flour a 9x12 or 2-8x8 baking pans Add tablespoon of salt to chopped green tomatoes and let set 10 minutes; rinse and drain in a colander. Cream butter and sugar, then add eggs and beat until smooth. Combine dry ingredients and add to creamed mixture a bit at a time and stir. Batter will be as stiff as a cookie dough. Add nuts and raisins, then tomatoes last. Spread in baking pan and bake 40-45 minutes or until a toothpick comes out clean. Served warm with a dab of whipped cream. This cake freezes well.
