Fresh Green Bean Salad (4 servings) - 1 lb. young tender green beans
- 1 bunch green onions
- 2 tablespoon olive oil or vegetable oil
- 1 teaspoon chopped dill
- 2 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- ¼ teaspoon ground black peppers
- snap beans to bite size and cook in small amount of boiling water till crisp – tender 5-8 minutes
- drain cooking water and run cool water to stop cooking
- put beans in serving dish and stir in sliced diced green onions
- in a small bowl whisk together… 1 tsp water, dill, oil, vinegar, mustard, and pepper until blended . Pour mixture over beans and toss lightly.
- Microwave on high for 3-5 minutes till tender.
