Fresh Green Bean Salad (4 servings)

  • 1 lb. young tender green beans
  • 1 bunch green onions
  • 2 tablespoon olive oil or vegetable oil
  • 1 teaspoon chopped dill
  • 2 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon ground black peppers
    • snap beans to bite size and cook in small amount of boiling water till crisp – tender 5-8 minutes
    • drain cooking water and run cool water to stop cooking
    • put beans in serving dish and stir in sliced diced green onions
    • in a small bowl whisk together… 1 tsp water, dill, oil, vinegar, mustard, and pepper until blended . Pour mixture over beans and toss lightly.
  • Microwave on high for 3-5 minutes till tender.
