Chinese Spinach

  • 1 lb washed spinach, torn and stems discarded
  • 2 Tablespoons salad oil
  • 1 teaspoon soy sauce
  • Heat oil and soy sauce in skillet.  Add spinach. Cover and cook 1 minute or just until wilted.  Uncover and toss till spinach is well coated.

Makes 4 servings.
