Creamy Spinach Soup

  • 1 10 ½ oz can of reduced fat, reduced sodium condensed cream of chicken soup
  • 2 green onions sliced
  • dash of ground nutmeg
  • dash of pepper
  • 4 cups cleaned spinach leaves, stems removed
  • 1 12 oz can evaporated skim milk
  • Garnish with raw carrot
  • Blend soup, green onion, nutmeg and pepper. Add spinach leaves a few at a time till mixture is almost smooth. Pour into a medium saucepan. Stir in evaporated milk. Bring to a boil. Reduce heat and simmer uncovered for 2 minutes. Garnish with fresh carrot.
