Cauliflower with Cheddar Sauce |

Sharon Chamberlin’s Cauliflower with Cheddar Sauce - ¼ cup light mayonnaise
- ¼ cup (1 oz) pre-shredded reduced-fat sharp Cheddar cheese
- 2 tablespoons chopped green onions
- 2 teaspoons Dijon mustard
- 1(2 pound) head cauliflower
Coarsely ground black pepper (optional) - 1. Preheat oven to 3500
- 2. Combine first 4 ingredients in a small bowl; stir well, and set aside.
- 3. Remove large outer leaves of cauliflower. Break cauliflower into large florets. Steam cauliflower, covered, 8 minutes or until crisp-tender; drain. Arrange florets in a 8 –inch square baking dish, and top with mayonnaise mixture. Bake at 3500 for 7 minutes or until cheese melts. Sprinkle with pepper, if desired. Yield: 4 servings.
