Ingredients 1 large ripe tomato 4 fresh peaches ½ cucumber ½ green bell pepper diced 2 hungarian hot peppers minced (remove all seeds) 4 cloves of garlic 1 onion diced 1/2 lime 1/2 lemon 1 tbsp. salt Cilantro (to taste) Fresh mint leaves (to taste) 1 tbsp. Olive oil
Puree 4 cloves of garlic with juice of half a fresh lemon in the blender. Add onion, bell pepper, hot pepper, mint, and cilantro to blender. Blend but don’t puree. Dice tomato and peaches. Add to blender. Add salt and olive oil. Stir together- chill and serve! To change the flavor slightly slice and grill the peaches before dicing them and adding them to the salsa!
